I woke up yesterday, just like I have in the past craving buffalo chicken dip!And of course, since I haven’t done a full grocery shopping trip in over a week – I don’t have all of the ingredients needed to make it. Plus, who wants to wait 5 hours while it cooks in the crock-pot? I wanted it right then and there! So I made a “quick fix”. I used some cream cheese, some ranch dressing, some shredded cheddar cheese and some of Franks Red Hot Sauce, (eye balled all of that of course), mixed it all together and through it in the microwave and voila – craving satisfied! I do have to admit it doesn’t taste the same without the chicken in it. And for some reason I keep thinking it’s missing something else but I think it’s just the brand of Ranch dressing I was using – HAVE to use the Hidden Valley Ranch brand – nothing else comes close!
Guess what I had for breakfast this morning – leftovers of the dip I made yesterday! YUMMY!

I don’t know if it’s because it’s getting to be that time of the month or what – but I am back to craving that Buffalo Chicken Dip that I was craving a few weeks ago! It’s killing me!!!! I even tried making another one of my favorite dips (Chipped Beef Dip) to see if that could hold me off and no such luck! (Even though I have been pigging out on the chipped beef one). I still have that longing for Frank’s Red Hot Sauce, cream cheese and ranch dressing mixed together!!!! Unfortunately (or fortunately considering I ate it for 2 straight days last time – and that was all I ate those 2 days) I have none of the ingredients. This is killing me though.
Off to get a huge glass of water filled with ice in hopes it fills me up!
And here’s the recipe for the Chipped Beef in case anyone wants to try it:
1/4 lb. dried beef
1/4 cup chopped onion
1 pint sour cream
1 cup mayonnaise
1 tbsp. Dill Weed
Mix all ingredients together and serve with pumpernickel bread. (I like to make a boat out of the pumpernickel bread and serve it inside that and use the leftovers as dippers. It seems the longer you let this dip sit in the fridge, the better it tastes too.)

If you read my post yesterday, you’d know I had a serious craving for Buffalo Chicken Dip starting yesterday at 5am. Well, I made the dip yesterday morning (only made half a batch though because I only had half the ingredients – this is probably a good thing). And yesterday it was the only thing I ate all day! (And I’m sure I now will need to take some diet pills if I keep on eating it the way I did yesterday.) I had it for brunch AND for dinner. And guess what I’m eating right now at this moment as I type this at 9:53am……..Buffalo Chicken Dip!!! Not sure what’s wrong with but this craving is so bad right now….even eating it isn’t helping! Good thing (or bad, not sure right now since I’m eating it and feeling like I can’t get enough) is that it’s almost gone. And when it is, I will be making no more of it. Bad thing is I have to go to the store today to get jeans for my kids and said store also sells food!!!!!

I woke up around 5am this morning craving Buffalo Chicken Dip something fierce!!!! I’ve been craving it on and off for the past few weeks but this morning was bad. I haven’t had cravings like that since I was pregnant! (And NO, I’m not – it’s impossible for me to be!!!!)
My stomach has been growling like crazy. I’ve been so good with watching what I eat lately. Actually, the whole house has ever since we found out Caelie was lactose intolerant. I’ve been buying much healthier snacks and food overall.
Hmmmm, I do have the fixings to make the dip. And I have been so good I think I’m entitled to this (especially since I am SERIOUSLY craving it).
Off to go make it now and here’s the recipe for those that might want to try it. Warning though: it’s addicting!!!!!!
Buffalo Chicken Dip (in the crockpot)
1 large bottle Hidden Valley Ranch Dressing
1 large bottle Frank’s Red Hot Sauce
2 large cans Swanson Chicken drained
2 cups shredded sharp cheddar cheese
1 large brick of cream cheese
Dump all into a crock pot. Put on high for about 2 hours. Serve with chips (I love to eat the Frito scoops with it) or celery sticks.
